Yacon is a tuber grown in warm and temperate areas of the Peru. Its texture is crunchy and sweet flavor.
It has Prebiotics and is believed has a favourable effect on the intestinal flora. Its root has vitamins B1, B and C and is composed mostly of water and oligofructans.
The roots of yacón contain quantities of Fructo-oligosaccharides (FOS), a type of sugar not metabolized by the body and that stabilizes blood glucose.
